My temp runs really low pretty regularly. Like 30-40° under. But on the highway, sometimes, it'll climb and approach 270°. It'll drop back to around 230° and turning on the defrost at that point will range anywhere from no change to 190°.
I already replaced one sending unit, but I can't verify this one's accuracy while driving. I don't know if I have a cooling problem, a bad sending unit, an electrical problem, or a bad gauge

It has a new cap from when I was diagnosing the original bad temp sending unit. Wonder if maybe it's faulty or if the overflow hose is blocked...

Only thing that should keep it from cooling at highway speeds would be the coolant flow totally stopping or the thermostat blocking it.
That said, if your coolant actually got to 270F, you'd be having some serious problems.
Your YJ is OBD-I, right? There should be some way to pull temp from the PCM... somehow...
