To test the tps on my '98 should I disconnect the entire sensor to probe it or do I need to try and get a paperclip into the back of the harness where the wires go into the tps? If it's the latter I can't seem to get a paperclip to fit unless I need to put some effort into it?

Get a barbered fitting to put on there and a longer piece of hose. Maybe zip tie it to something so it can't/ won't move towards the fan.

Seeing how no mechanic I take the Jeep to will perform any kind of fully efficient labor, I am in the market for a fsm.
Is there any trusted accurate source for a factory service manual made for a 1996 Cherokee?

^this still, and I removed my headliner, but it was literally just fabric with foam and mesh on the back. Isn't it a hard plastic material usually under the fabric/foam usually?

Update:
Oil change with Pennzoil high mileage because it was 30% off. New Purolator filter. New temp sender.
Tapping is gone from bottom end (for now, at idle), tick from #6(?), and running a steady 220°F.
Kinda wanna ignore these problems for a while lol
EDIT:
45+ minutes at idle were perfect, but smoking a ton as soon as I start driving. Tapping is back in the bottom end.
