Just to follow up.
I spray PB blaster on the joints on the steering shaft and turned the wheel lock to lock, over and over. I can now turn the wheel with one finger with all of my steering connected. Its smooth as I think it can be. I don't know if it was more air bleeding out, shaft getting lubed or a combo of both but its fine now.

When the throttle plate is shut, a small plunger to the right (closer to the engine) is actuated to allow enough air into the engine to idle. This plunger is exposed to oil vapours from the CCV system and can get gunked up, and not move properly. First step to solving this is to take apart your throttle body and clean things. You can find writeups on here of how that works.
Of course the PCM will only open the IAC if it thinks you aren't on the throttle - so if the TPS is inaccurate (it works like a volume **** - I'm sure you've heard one that has a spot that's all staticy) the PCM won't open the IAC. You can also find writeups here on how to test the TPS with a multimeter.
Your oil pressure is supposed to move, oil thins out as it gets hotter. However 3/4 of the gauge is quite high - consider taking a look at the pressure sending unit and its wiring for corrosion and leaking oil. Damage in this area is pretty common and will cause a false reading. It's located right between the distributor and oil filter so it gets hit pretty easily.

I recommend buying one because a decent one runs $30 on Amazon. The one I rented at Advance Auto snapped off in my column, and I had to buy a set of extractors.
