Which Radiator.. opinions plz..

CN: What radiator should I get and from where?
I've been having a lot of overheating problems. It would run at 210 for a good while, then all of a sudden it would spike. It wouldn't gradually go up either, from 210 to spike instantly. Most of the time it would run around 260, just under spiked. Over flow is bubbling, steaming, etc. Now on a side note, my oil pressure is normal for most of the time, but it peaks when i give it some gas or random times while driving...
I replaced the thermostat, radiator cap, fan clutch, broken shroud, coolant, only thing left now is the radiator... Gotta save the best for last.
Here's where I need help. I live in Antigua, 85 degrees year round (feels like 105 when there's no wind), a lot of stop and go, speed bumps everywhere, very mountainous steep climbs, get to about 45mph TOPS around the island. 2000 xj 4.0L 31" tires, 3" full suspension lift. I barely ever run the A/C unless I'm driving in the middle of the day, but even when the A/C fan is running it doesn't cool down. It's gotten to the point of my paint bubbling/delaminating because the hood gets so hot.
What type of radiator should I get? Stock or something better for my driving conditions? 3-core worth it? Any websites with good prices that you guys know of? Thank you so much in advance. I may just be over thinking this but I'm curious on everyone's opinion.

The CSF from Dirk at www.dpgoffroad.com is a favorite among lots of us here in the states. It's a 3core with metal tanks, unlike some of the plastic tank rad's available.

Also, automatic trans? If you dont have an auxilary cooler you may want to consider one.
Could be that the trans is heating up and not allowing the rad to cool the coolant sufficiently.

i did everything in one shot. water pump thermostat hoses rad everything..
now i JUST sit under 210. if im in park it will go up to 210 maybe a little over
