I recently put on a new fan clutch. On a 75+ degree day the temp guage still slooooowly rises when waiting at a light. is this normal since these jeep engines tend to get real hot? Also if I run in to a store and come back out and start her up, sometimes it'll "studder" just a tad until coolant moves its way around again to cool her down..any ideas? The heatsoak method has been done already...I'm in the process of getting a trans cooler also. I did notice that it looks like the jeep has somethign in front of the radiator..it's thin and about the same size as the radiator (i'll try getting pic) it doesn't look at all like the trans coolers people add. Is this just part of the radiator or maybe a stock cooler?
Are you running the AC (this puts more heat into the system)?
Is your electric fan working properly (it should kick in when it hits 215 or if the AC is on)?
That thing in front of the radiator is likely the AC condenser.
For the heat-soak if you already insulated the injectors/manifold, options to help mitigate this would include hood vents or a delay relay that runs the electric fan for a few minutes after the engine shuts down.

Salad: On cooler days or while driving it's right below 210. When outside temps rise and I'm sitting still it'll start to rise above 210. I haven't sat to see how high it would go but it gets to 210 or right past it.
If I shut it off to run in the store and re-start it after 10-15 min it'll be at the line past 210 or so. Maybe this is all normal with these jeeps? I'm just worried for the summer months to come. Last summer we saw some 100+ degree days. Which I know sucks for any car.

While it is running it shouldn't get past 215 or so, it is normal for it to rise to 215 when sitting in heavy traffic (particularly on a hot day)until the electric fan kicks in and brings the temp back down. If it keeps rising past 215 you will want to look into cooling system problems (bad electric fan/sensor/relay, plugged radiator, failing water pump, sticky thermostat, etc.).
With a 2000-2001 I would be tempted to do a full cooling system overhaul (new water pump, rad, hoses, thermostat, etc.) if I didn't know when these had been last replaced given the potential for issues with the 0331 head as a result an overheat.

its ok for it to sit just above 210. in texas summers, during traffic, mine will sit about 215 . as long as it aint reading much higher than that youll be fine
I didn't read the whole thread so disregard if this has been covered
but you have line comminf off the tranny to the radiator.
those are to warm up the tranny juice ... !!
I cut them with a tubing cutter and put in a fin&blade cooler for $60 in under an hour
it was really straightforward and only a little bit messy
it's working fine in this beautiful Arizona weather
