Can I get some input on this yoke deal?
Thinking about grinding the part that is hitting, but I fear it may be more than just that

no! 
take your driveshaft to a local driveline shop and get your factory driveline retubed. load it up with new joints and have it lengthend etc. for $100-$200. this is by far the best route. a custom setup is the only thing that calls for a custom shaft, which none of us have.
