I just installed my 4.7 stroker and once in a blue moon the rpms would go down once I hit the gas. It's still running the stock ignition and I'm wondering if that's what could be causing the drop in rpm.

No. The biggest demand on the ignition is under load and higher RPMs.
What year xJ?

I did the Accel coil years ago and it's been fine, I forget it's there. I also added shims to the distributor to limit end play. This can be dicey and is a matter of personal choice. I would also suggest by way of easy mods, moving the IAT sensor from the manifold to the intake horn, ..That one I saw real improvements.

i run an MSD street fire box and summit racing coil on my Renix. maybe its placebo but I noticed better throttle response immediately. also having a tunable rev limiter is nice.

Just make sure it doesn't have a Marelli coil.
