Default Xj sputtering/losing acceleration only on first acceleration

Sometimes when I first start driving down the road around 15mph I lose acceleration and it almost feels like I'm running out of gas. It's also been running a little rough while idling. Slightly more white exaust than usual. It seems to sputter more when it's wet and raining or humid outside. Any ideas? I recently replaced the catalytic converter and exaust (needs welded). I did a tune up last summer and didn't drive it all winter so she sat for 7 or 8 months. Any ideas where to start? I was thinking fuel pump, filter and injectors? Maybe another tune up?

Check all connections to coil, pickup coil, and crank position sensor. Make sure they are all getting a good connection. At idle, wiggle every one of those connections and see if engine RPM changes.

Also that gaggle of wires that ground to the dip stick stud. Next check all the engine grounds.

Don't do another tune-up.
Fuel pressure can be checked with a loaner gauge from the parts store.

Wiggled all the wires and connections at idle and no change in rpm. I'll go check the fuel pressure layer this afternoon. I just noticed a knock in the engine somewhere. I'm new to working on my own vehicles so it could be nothing maybe 🤔

Update: the engine knocking only begins after 30 seconds or so running at idle. I checked the fan hub bearing and it seems fine. I located the CPS and it looks like it might be missing a bolt? Do you guys recommend me testing with a multimeter or just replacing? Also.. thank you for your help thus far!

What are the chances it could be water in the fuel? I haven't driven this thing since last year and I went to fill it up today and it's missing the friggin gas cap! It sat outside from September 2022 until last week when I got her started again. Fuel filter hasn't been replaced in god only knows how long. I'm trying to avoid spending more money unless necessary. Was considering a full engine rebuild and cleaning but if it's something too expensive to fix I have other plans. There's a really nice xj same year, not far from me with a bad frame and low mileage I was considering buying. The interiors and extior cosmetics are phenomenal. Was thinking about swapping the engine and parting out the body. What would you guys do!

That part has 3 holes, 2 are for fasteners.

Update: completed a compression test. Results were
cylinder:
1- 90 PSI
2- 130 PSI
3- 100 PSI
4- 120 PSI
5- 100
6- 130 PSI

I'm thinking piston rings, pistons or head gasket?

one of the spark plugs was extremely corroded as well
