Got mine running again last night after blowing the head gasket.
While sitting in a Dairy Queen drive thru this afternoon, the temp got up to 210. Is this "hot" or nothing to worry about? I'm planning on install 3 electric fans in the next few weeks.

Cool, thanks. I only have idiot lights, so I installed an aftermarket set of gauges. Not having the factory gauges, I'm unsure of the temp ranges.
If you haven't replaced the water pump, do it. The blades on mine were completely rusted away.

Mine runs about 200, might hit 210 tops on a long hot day of crawling around, but I almost have to try to make it run up to 210. Completely factory cooling system, only the old clutch fan with no shroud, and the radiator stays packed with mud 99% of the time.
My buddys 90 XJ runs at least 210 all the time, with a cooling system in much better shape than mine, his electric fan doesn't work though.
My roommate's MJ, according to an aftermarket gauge, runs between 200-210 tops, with only the factory clutch fan.
Seems kinda interesting to me that out of these three, only the Jeep with an automatic runs hot, kinda makes me wonder if the tranny fluid running through the radiator as well has anything to do with it. I dunno though, but that's what ours run at.

Mine runs between 195 and 210. Even in the summer, it doesn't get much over 210. I flushed my rad, new thermostat, took out the A/C condenser (A/C didn't work anyway and was thinking OBA) and did the ZJ fan upgrade.

Does your heater work? If it does, bet your gauge is lying to ya. If your heater doesn't work (gauge accurate), running too cold can be about as bad as too hot.
