The purpose of the fan shroud to create a "Vortex" so that your fan pulls more air. If you take your shroud out you will not pull as much air and you literally rob air from your condensor. Since you reduced air to your condensor your heat exchange to change your freon into a liquid again is not going to happen as fast thus not letting enough freon to go through your expansion valve to get the desired A/C temp you want.

Are you serious? Please read online how a car works instead of cluttering this site up with more of these kinds of questions. Of course your a/c is going to be cooler if you put a new fan clutch in your jeep. The reason is because your pulling more air over the condenser( The Big thing in front of your radiator...)
