In a pinch, when I made the same mistake as you did, I used my front bumper (at the mount) as a tow point for a winch. Thing is your gonna need a bumper and everything you have to break to get the chain to wrap around the bumper (grill, plastic trim, etc). if you don't have a winch, come a long it out. Get a good 4000 lb one minimum, grab a buddy to drive and start wrenching. You could use the rear bumper (at the mount) as a point too. I think there is only one piece of plastic running along the top of the bumper to keep you from dropping it through.
When your finished, go to the nearest JY and buy a rear hitch and a couple of front hooks off an S-10. You will have to drill holes and use a piece of 1/8 steel and washers inside the unibody rail to keep it from pulling through the unibody, but they are rated for 10000lbs.

If I had my tow-point-less xj stuck in the mud and there was no other solution to pull it out, I would have done what diesel said. Head to a yard or 4wd hardware (cuz its close), buy a hitch, dig, lay garbage bags down ( i have a box just for laying in mud for carnage repairs), and get to work. Going shopping for a hitch, spending $150, and laying in the mud for 30 minutes beats welding and repairing my leaf spring mounts back on (after paying a fortune to have it towed home), or stitching up my ripped up frame.
We've done worst things laying in the mud under vehicles than installing a hitch. When it needs done, you will do it regardless of it being muddy.
I don't wheel without tow points though......
If it hasn't been extracted yet, find a local tractor supply store. they have some really nice beefy hitch hooks that you strike your knee on everytime you walk behind the jeep.

Depending on how "stuck"...
In rear use both shackles, not just one.
In front, small chain through the knuckles or around the tubes.
If really stuck, get lots of lumber out there and two hi-lift jacks first.
Take your time...

wrap a strap around a diff and git er done. I was in service and Recovery in the army. Ive gotten some ridiculously stuck vehicles out. 100K container forklift, hummers, oshkosh hemmits, M1 tanks, etc. you got to get dirty to make it happen.

Those vehicles have heavy duty steel frames that their axles are attached to, Cherokee's don't.

been there, done that, did not buy the hat. had my stuck up to the windows and had to leave her over night as well. took six guys three hours and a 6 ton chain fall to get it out. what is about xjs and mud. i guess thats where the term "brick" comes from. i know first hand they will go over just about anything but they sink like a brick in the mud.

so, was your jeep still intact when you went back to it?
here, you leave your vehicle because its stuck and it will be stripped and burned when you come back the next day. you better sleep in it with a gun or have a few people stay with another vehicle or its a goner.
