Welcome to CF And Hi From Florida...
Your best bet is just pop a 6L in...you could prob find a running doner for 500 bucks... and it will take thousands to get your little 4 banger to put out... besides... its torque you want.. and hands down you never get what you can with the 6L

What do the guys above me mean by a 6L? as in a 6.0L V8? or 4.0L 6 cylinder?
You should be fine with the 2.5L offroad. An engine swap is a good amount of work, plus you don't see that many 2.5L XJ's around, especially in as good a shape as yours is. If it was the 2.8L V6 then it would be worth swapping because that is a terrible motor. The 2.5L is known to be fairly reliable. I had the chance to drive an '85 2.5L XJ and it wasn't as bad as I thought it would be. Sure its no 4.0 but it still had decent low end torque for offroad and when put in 4-low it went through a lot.
If it were mine I would just upgrade the intake and exhaust to help it breathe a little better. Should gain you a little power and mpg. Then throw a 2" budget boost lift on it and some 30" tires and hit the trail.

Clifford makes a header for the 2.5, however it is pricey! I ran my 2.5 almost 260,000 mi before it wouldn't go 55 mph any longer. I was running 3.73 gears, 31'' tires, and a 4 speed. Keep it tuned and let it breath (clean air filter) as well as staying on top of oil changes, will give yours a long life before you have to do anything drastic. The weber carb is a good but expensive upgrade, and will not give you hp for the buck return that is worth the investment. It will however improve throttle response and any issues you may have at idle. Good luck
