2000 XJ. Seems to run fine, If you let it idle long enough without driving it will start stuttering then shut off, it will not start back up for about 10 min. The temp gauge shows just a hair over 210. Any ideas?

Since it is driving fine and sputtering when it dies thinking not CPS.
First thing I would do is put a fuel pressure tester on her and see what you see.
Any codes?

You should see if there are any pending codes in there. CEL would not be on if they were pending.

I was pondering if there is somekind of thermal cutoff under the hood, or if it was the fuel pump, maybe a hot relay, but it wont shut off if your driving, only if it has been idling for a bit.

That is a good point. I experienced thermal failure with the CPS on my '00.
But it would die when driving pretty much when the Jeep reached operating temperature.
Also when just sitting and idling. But it shut off like you turned the key.
Not sputtering like you said yours does.
So there is the ASD and the fuel pump relay in the PDC.
Fuse box in the engine compartment.
Wondering if there is a relay in there you can swap.
Just to run a quick test.
Wonder if the radiator fan relay is the same.
How long does it take for it to shut down when idling?
If not to long you can run without the fan relay for a bit I'm thinking.
Just be aware that it might trigger a CEL for the fan relay if you don't put the
relay you are testing in its place or leave it open.
But that just means you will have to clear the code.

I already switch the relays around. It takes maybe 20-30 min once up to temp.

OK.
So I guess we are back to putting a fuel pressure tester on her then.

I always post my response to this type of situation just in case it helps someone...so check the schrader valve on your fuel rail. Make sure it is tight. Of course check your fuel pressure. If you have a gauge keep it locked on until the engine is warm and if it starts back up after,,,it is the valve on the fuel rail. Not necessarily your issue cause it is rare but I mention it now because of my own experience....
