Distributor, power steering box, make sure the PCV and breather valve on valve cover are tight, alt, ecu, relocate breather tubes on axles trans and t-case, lots of silicone on spark plug boots on both ends, ac compressor and I'm sure there's something I'm leaving out. Most snorkles are made for short trips through water not being submerged for long periods so check it as well. Also keep in mind once you get in water around a foot deep it can carry you away if the current is strong enough.

Go to Autozone or Advance Auto and pick up the biggest tube of di-electric grease you can find. Smear it in every electrical connection that you plan on getting wet. Also everything Xjmarc said and you should be set.

x2...when i used to mud race 4 wheelers, it took us about 2 hours to do this EVERY TIME, and the one time you slack up, its a $2000 mistake...so be very thorough with this
If you haven't already removed your drain plugs you'll wanna do that as well. It'll help with draining and believe it or not some air can get trapped causing you to become lighter. This will increase the risk of getting carried by any current.
What needs to be done to the steering box?

Power steering box needs to be sealed because the cap doesn't seal well and some even have a vent on it. Water turns the fluid into a nasty foam and kills the pump and ain't good on the gear box either.
