Maybe a lil corrosion from water set in already, dry and polish up the connector ?
Just thinking out loud, have you checked the coil/coils for moisture ? Good strong spark ?
Good time to buy a compressor if you don't have one. I would blow air in every connector I could find.

Well you do have one coil. sits forward of the distributor.
You might notice a difference when the tps is unplugged because the computer likely defaults too a safe setting to allow you to continue to drive the vehicle, and one of those settings is likely a slightly higher IAC setting. I might take a closer look at the ECM along the driver fender. make sure all the connectors are dry, no green oxidation in them, maybe spray them down with a spray silicone and re-check.
You may want to do a compression check. One working theory could be that the engine block went through a rapid cooling when it was submerged while the head was still hot, I suppose that might be enough to cause a headgasket to check out. fortunately you have an earlier head and "should" be safe from the cracking that plagues the later models.
If you can hear the gas gurgling back down then I would agree that, that sounds like a check valve. but it does not necessarily rule out a leaky injector unfortunately the only way to really check this is to pull the injectors out and inspect.
Have you pulled the distributor cap and inspected inside. If you see black/white marks in between terminals that is a usual indication arcing. also, a black line along the top of the rotor is another indication.

oil clear? almost always get water in the oil from a bad head or gasket
steam out of exhaust is another sign, as is water res consistently low

The oil is relatively new. No coolant loss but there is definitely gas in there. I'm still hoping for the best. I checked the injectors and they aren't leaking. I unplugged the MAP sensor and it ran the same before and after. Think it's running so rich from no MAP that it's washing the cylinders and polluting the oil?

Fuel pressure test shows 49 psi at idle on start up. After 5 seconds or so the needle fluctuates quickly between 39-50psi.

a leaky head gasket does not automatically indicate coolant in the oil, or vice versa. its entirely possible that the head gasket is blown in such a way that it's pushing exhaust gasses into the cooling sytem, when it gets bad enough it will actually start to cause some brown sludge build up. early signs before the gunk would be a rather foul smelling coolant, a low radiator and over full reservoir, steady stream of bubbles flowing to the top of the radiator (cap off)
