I think I figured it out. I really just wanted like a 1.5 to 2" lift. I don't carry any loads to speak of. It's a daily driver, 2wd pavement only.
Right now I have the CC782 front coils with 3/4" spacers. I've decided against the OME coils because of cost and the fact that I already have the Moogs installed. In the back, the Crown HD leafs with the very bottom leaf removed and Bilstein shocks. I'm running 30" tires. I aired them down to 30 lbs from 35 and now I'm happy with the ride. The front sits a little higher than the rear now. I'm either going to remove the front spacers or swap back in a shorter fourth leaf spring in the back to raise it up a little. The curious part is that the Jeep does not sit level side to side. The driver's side rear is a half inch lower than the passenger side.
Driver side is a little lower on my Jeep too.
You could swap your 3/4" coil spring spacers for a OME 10 mm spacer which will drop the front by 10 mm. I use these on my XJ.

Where did you measure the ride height. The proper place to measure is from the top of the axle tube to the frame rail. It may be that the sheet metal is off by 1/2".
If I decided I want to raise the rear of my Jeep after taking out a leaf I will use extended shackles to restore the ride height. If I were in your situation, I would remove the front spacers.

I was measuring from the ground up to the middle of the fender flare. Hadn't thought about measuring from the axle tube to the frame rail. Makes sense. Although I placed a level on the underside of the body which indicated that the left side was low.
Also, I think the drivers side typically a little lower for whatever reason.. (what is the reason??!!) .. From memory, my OME 2930 spring set came with one just a little longer, maybe 1/2", than the other and the longer one went on the drivers side.
