I bought my XJ without carpet, just bedliner. Its not any louder, and as far as I can tell it doesn't seem to get too hot. Although I have yet to drive it in the summer.

my 93 still has the carpet fitted, but I bought my 1998xj from a framer and it was pretty nasty inside. The carpet was beyond help. Ripped it out with the intention of replacing it asap, but ive decided to just leave it as is.
I painted the floor with 2 coats of "protecka-coat" bedliner, which is pretty much the same thing as rhino liner.
The floor heats up a little around the transmision, but not so much that its an issue (mabye it would heat more with an auto trans? - ive got a 5 speed manual). The noise is slightly increased, but only to the point where you just turn the stereo up another couple of notches.. it was easy to do.. and my jeep doesnt smell like stale cow crap any more

seats and the centre consol - unfortunately the carpet ran right up under the consol. The consol comes away really easilly though.. mine was held by a couple of scews inside the little cubby hole armrest, and the front end was more or less just wedged under the dash central facier. I had to drive it the next day (before I painted it), so I just threw in the drivers seat - heres a few pics of the inbetween stage.. sorry a couple are in the dark, and theyre not very structured..just me messing about with a camera.
