First make sure that she is mechanically sound ( not gonna blow up on the side o the road or trail) then its really up to you and you wallet. A mall crawler , rock crawler, trail demon it's all about you and your rig and what you want regardless of what others say

What's a good way to go about the mechanically sound part? She's got a new head, clean oil, no leakage, starts up every time, that kinda ****?

First thing I would do is a fluid change. Change the diff fluid, oil, trans fluid and the coolant. Replace the air filter and check the brakes. After that, make sure she runs smooth and you're pretty much set.

The first thing to do is stop calling your Jeep a CAR!

flush all fluids
Spark plugs
Dist cap and rotor
I'd do the fuel filter too

Basically a good tune up

here's what I would do.
get up to date DMV wise
fix any over heating issues (this probably means replace the radiator)
flush the cooling system
install a transmission cooler
seafoam it then oil change and tune up
clean the engine and fix any and all leaks

then I'd cut the fenders
delete the rear sway bar
shackle and spacer kit and 31" mud tires
weld on some tow hooks
put on some rock sliders
install a lunchbox locker up front
enjoy
