4.56 if you want to go 80. If it doesn't get wheeled I don't understand why you would want to run a 35 though.
Also depends in area, if its mostly level or lots if hills. If in a hilly area definitely 4.88

RPMs running at 80MPH will be, 2362 for the 4.10s, 2627 for the 4.56s, 2811 for the 4.88s.
The effective ratios with 35s are, 3.33 for the 4.10s, 3.71 for the 4.56s, and 3.97 for the 4.88s.
As you can see with your vehicle height, with over 9 inches of lift and 35 inch diameter tires the 4.88s are going to give you the best performance and probably the best mileage, the 4.56s would work, just not very well, and the 4.10s would perform much worse than the stock tires and gears.

4.88 x (stock size)27 / (new size) 35= (affective ratio) 3.76

Stock tire size is 225x75 r15 the diameter of a 225 is 28.29.
The diameter of BFG 35s is 34.8, so 28.29/34.8 x 4.88 = 3.967 round up 3.97
28.29/34.8 x 4.56 = 3.706 round up 3.71, 28.29/34.8 x 4.10 = 3.33
Even if you went with 215x75 r15 most of them are 27.6 so 4.88s would have an effective ratio of 27.6/34.8 x 4.88 = 3.87
