High RPM at 100km/hr
I have a 2000 Grande Cherokee V8 Automatic, I am not sure if the engine is in proper gear at 100 Km/hr and up. The O/D is not working properly either, turned off O/D at 100 km/hr and saw close to 3000 RPM, quickly put it back to O/D and it was at 2000 RPM.

No, that's about right. Turning off O/D drops the trans into 3rd gear so 3000 is about right. Overdrive in this transmission is 4th gear. It's overdrive because the gear ratio is less than 1:1. 3rd gear IS 1:1. You can run your jeep at 3000 rpm all day without hurting it. It's a bit high to be fuel efficient however. If you're towing something, you should be at 60 mph with O/D off anyhow.
