So if the spot where the temperature sensor goes cracks, how bad is it ?

Okay, that's just in the thermostat housing. It's easily replaced. Some of the older 6's have the temp sensor in the rear of the head and that could get expensive.

it looks like the top of the engine is all one piece

In the front of the engine where the 2 hoses connect is an aluminum housing that bolts on with 2 bolts from the front. It holds the thermostat behind it with a gasket. rockauto.com has one for about $7.
