Well, yes. My son and I stripped the 1990 Ranger and 94 Explorer, everything from the Explorer went into Ranger. Axles, powertrain and drivetrain. Had it starting and running in two weeks. Took the rest of the summer to get it out of my driveway!
So a V8 XJ doesn't sound difficult. Mechanical will be "easy". Wiring the TBI to work with Renix era gauges and wiring isn't going to be as easy though. 2WD makes a simple thing easy. Then its a matter finding the bigger.

Some months ago I sold my 90 XJ. I might be getting it back. Free even, but likely dead. Or needing a rear axle (pinion growling). A friend has a 350 Chevy I can have cheap, with a core 2WD 700R4. Two ideas come to mind, both with the 350! One, desert toy. No racing. The other, more street oriented. Maybe even, track oriented.
my odd thinking is, I have a Chryco 8.25 with 4.10s. Should handle the power for either application. 4.10s might not be fun for the highway with street rubber though. Just some mental bench racing.Anyone need a 1994 Ford Explorer shell? We stripped ours and it is now masquerading as a 1990 Ranger. No axles...
