A bunch of those gasket dressings from the Permatex site are exactly the ones us old farts have been recommending......

Us old farts are man enough not to mind scraping and cleaning old gasket dressings. I have made many a gasket from a piece of cardboard and indian shellac.

I tend to follow the gasket manufacturers recommendation if available otherwise I research at those links if it is a gasket material or application i am new too.

Sorry to keep on about this but can someone tell me why this factory part has this round gasket and what it does ?
If it would give me a little more sealing I might need it the way that bottom bolt is.
The extra hole on the thermostat is drilled all the way threw the head.

I've actually been thinking about that. It's not to seal coolant in the system, it's to prevent some tiny amount of coolant making it around the edge of the T-stat. Just not a factor, no big deal....unless. Someone in North Dakota or Minnesota, they may have coolant below zero, any extra circulation around the little space around the t-stat might be unwelcome. I'm sure that is all it does, it stops any movement atound the edge since the machined groove is (presumably), a tad wider that the edge of the t-stat. Install it if you like. I wouldn't bother with any more goo that it takes to make sure it stays in place, (in the housing), while installing. 
Added...are those your photo's above? In the vid he seats it in the housing, which would mean it's on the wrong side of the t-stat in the above photo. The spring faces the engine.

Spring is set to the engine hah
There's a video I posted utube of the guy placing the the round gasket on the outside of the thermostat once he sets it in the head at 12:00 position. But I tried holding it/ gasket there just to see how hard it would be to get it to stay in place. Impossible I think without gaskacynch.
Even then I think there's a chance it might slip and interfere with the plumbing.
