The rubber bumpstops are inside your coil springs. They keep the axle from articulating too far upwards and ruin your fenders/tires.
I use hockey pucks stacked inside the coil as bumpstop extenders. For the rear, you have to unbolt the rubber bumpstop and make spacers to lower it.

no it does not affect your ride height. all it does is keep the axle from going up too far and smashing your tires into the fenders. it also stops the axle before the shock is fully compressed. what you need to do is install the shocks and then flex it on a hill to see how far up the axle can flex before the shock is fully compressed. measure the gap between your current bumpstop and plate below it (in coil spring) and for the rear, the same thing except the space between the bumpstop and axle tube.
hockey pucks can be found at sporting goods stores. rear bumstop extensions can be made out of square tubing or whatever you can use to lower it. take a look how its setup on your jeep and you will get the idea of how they work and how to modify them. its real simple stuff.
