OverCOOLING? Yeah, wierd right? Need help.

So, to fix my overHEATING issue during the summer, I bought an all-metal 2 row rad and replaced my water pump, t-stat (193*), hoses, t-stat housing, and coolant temp sensor. Summer problem fixed; Fall/Winter problem found.
Here lately in VA, it has been getting in the mid 50's in the morns. When I commute to college and back, I overCOOL. The first warm-up (before the first t-stat open) goes well and as usual, but as soon as the t-stat opens, you can watch my temp gauge drop to the second white line in app. 2 seconds. When it heats up again, it does the same thing only slightly closer to the 210 mark. And this is in 50* weather! God knows how bad winter will be.
My question. I've heard of people making restrictors to go in the upper rad hose. Anyone ever done this or have any other ideas? Thanks everyone.

I've got the correct 195* t-stat in there. The issue is that when it opens, my radiator cools the coolant so well that it sends all this cold coolant into the engine too quickly.

There ain't no such thing as "a Jeep radiator cools my coolant so well that it". Sounds like u have a temp gauge problem. Loose the 193 t-stat and get a 195.

My mistake on the t-stat. It is the normal 195* t-stat (Autozone calls it 193* for some reason) but it is the stock recommended one. And yes, amazingly enough, it cools TOO well lol. The temp gauge is fine. It's been checked properly. I am liking the above idea about blocking one side of the rad. I'm gonna give that a try.

That's gotta be a first, someone running to cold. Anyway you can try covering part of your radiator so it will run warmer. At least that's how I did when I was a yankee in Huntingdon,PA..lol

x2 on the t stat, try the correct one from the dealer, if the stat is working correctly it will regulate the flow of coolant, so if your rad is "overcooling" the t stat should close and restrict the flow to maintain the correct operating temp, otherwise.....cover part of the rad.
