is my jeep running too cold??

On a hot day it will run just below 210 sometimes it gets hotter so I turn on the electric fan manually (switch mod) and withing minutes it will drop to like 180-210. On a regular day like today where it rained it was at like 165-180 constantly and I never had to use my fan. It was running at 210 for a while but when I would wheel it it would reach red line pretty easy so I poured water into the coolant about a water bottle amount and now its been running below 210. Also im running no thermostat until winter comes ill throw one in there but right now its really hot I live in Arizona.

The thermostat pretty much stops the flow to let the engine warm up to the desired operating temp, (around 200*). Then it opens as needed to allow flow through the radiator to keep it where it belongs. It continues to "balance" the heat from the engine, and the heat circulating out to maintain the right temp. Like in the house, the heat kicks on when it's too cold, then it turns it off when it's too hot. Any functioning thermostat will be fully open before a car overheats.

Some/all other cooling system components are bad causing the overheat when wheeling.

Does NAPA make their stuff, thus somehow making it better?.....or just distribute stuff made by someone else (probably in China)?.......similar to the way Advance distributes stuff.

Really? Seems like Advance sells Stant brand stats.....Stant is a well known OEM supplier....is NAPA?

Napa is a distributor. They don't MAKE anything. Even Napa branded products are made by a company FOR Napa. My pops used to work at Federal Mogul. They are a Logistics company that receives parts in bulk. And packages them and ships the to distributors. He's told me numerous times they would get a big batch of parts, for example water pumps, they would put the SAME pump in AC delco boxes, Napa boxes and Value craft boxes.
Don't look at the distributor loom at where the actual part is coming from.
I don't understand the logic here...
If you are worried it's running too cool/cold then put the STOCK 195 deg thermostat in. doesn't require a degree is Science or a ASE certification...
A thermostat will keep a min operating temp of aprox 195.
If you are worried about overheating, then you have other issues with your cooling system.
I proper working thermostat will not cause overheating, just prevent over cooling.

I had problems with Stant from Napa. 3 Jeeps. 5 Stants.. Opened too soon in the winter and too late in the summer. Factory 83501426 = quick warmup in winter and stable temps in summer.
More details:
I spent 2 days and $50 diagnosing overheating of 96 Corvette.
Problem was brand new thermostat from Advance. I bought one from Napa, put them in boiling water and Napa opened about twice more.
I did the same 2 more times with NAPA and Advance Auto thermostats, same results.
Funny thing that old thermostat was fine, I just replaced water pump and (stupid me) decided to replace thermostat.
I even sent email to Stant company to find out specs (opening travel).
Well their thermostats were out of specs.
I spent 2 days and $50 diagnosing overheating of 96 Corvette.
Problem was brand new thermostat from Advance. I bought one from Napa, put them in boiling water and Napa opened about twice more.
