Leaking coolant/boiling when turned off

I know alot of similar threads have been posted like this and I've read most of them but I've tried everything and I'm really frustrated at this point. About 2 months ago I was driving home from a 200 mile trip and my check gauges light came on. That's when I noticed it was starting to overheat so I pulled over and shut it off immediately. Once it cooled down I checked the radiator and ended up adding a gallon of coolant to the radiator. I got it home fine, couldn't find any visible leaks but the entire cooling system was stock so to be safe I bought a new radiator, cap, and thermostat. I came home flushed the entire system out. Replaced the radiator, cap, thermostat, and coolant. All is good.
Two weeks later I notice that it's making a gurgling sound behind the dash when I crank it up but not when I'm driving which I read was air in the system so I try to flush it out. Still there. I check the coolant; two quarts low. Since then I've been adding about a quart of coolant a week but have yet to find any leaks. On top of that I got home today from buying some interior cleaner. Park the Jeep on an incline and start cleaning the interior when I hear fluid hitting the concrete. I pop the hood and the coolant in my reservoir is literally boiling out of the overflow. I don't know what else to do at this point. Any ideas before I drive it off a cliff?
Also like to add that I can drive it for days and the coolant level will stay the same but sometimes I can drive it 10 miles and will have to add a quart when I park it. And that 6 months ago I had the head gasket replaced. It never overheated but it started to back fire on me and that's when I put it in the shop so I don't think that's the problem.

Defintely possible it is the 0331 malady
Notice anything not quite right while driving.
You have guages or just warning lights?
Do you ever notice white smoke/steam from the exhaust?
Was the head sent to be examined and resurfaced when the gasket was replaced?
Were the head bolts replaced? Were the head bolts retorqued after 100-300 miles?
I know you already replaced them, but check the thermostat and radiator cap anyway.
Could be as simple as a bad radiator cap. Cost you about $5 to swap it.
Recommend OEM or NAPA cap and Tstat.
And thermostat could be bad or in backwards.
Cheap Tstats are notoriously bad.
And please don't ask me why I say the Tstat might be in backwards.

I was experiencing boiling coolant in the reservoir (98 Sport) and replacing the rad cap fixed that. It definitely wasn't holding pressure. That said, I've still got more work to do on the coolant system.

That was my first thought but when I had the head gasket replaced he had the head re-worked. I realize that doesn't rule it out but that's the last thing on the list as of right now for the sake of time/money.

I know you already replaced the cap, but that would be my first choice as the cause.
Its not overheating now, correct. I think it's not holding pressure. It's blowing coolant out as you drive. Then when you stop and as more heat is absorbed there is even more pressure built up before it starts to cool down. The cap releases/vents the coolant and then your low on coolant. I may be totally wrong, but I would try anothe cap. Preferably OEM or NAPA. Using the one from NAPA it is about a $5 test.

The 0331 head will crack. Just a matter of time.
And if it overheated, that could've caused the crack.
It sounds like there is pressure building in the cooling system.
Keep in mind a coolant passage doesn't always have to bridge an oil passage.
