Jeep driving me crazy

Need some help, about to start breaking windows lol..... 00 xj 4.0 4wd 250k ... Backstory goes.... Had someone change freeze plugs and got it back and was over heating- changed thermostat, radiator, electric fan, fan clutch, fan shroud and finally the heat gasket( ended up also changing crank position sensor, cam position sensor, up stream o2 sensor, ignition rail).... Was running fine after all that money lol, its my third xj so I know how they love them $100 bills I swear.... Just brang my jeep back the the same shop that did my freeze plugs so I could get my ac charged back up, ac works great now, but now its over heating AGAIN... just flushed the hole system, new thermostat (180°, I know its low but its been well over a 100° for 2 weeks straight), new radiator cap( more expensive one, with the flip deal) ... Got home a few hours ago and did a flush and changed the thermostat and cap and drove about 60 miles and its running over 210 on the highway with no ac on and about 78 out... I'm stumped... Going to get new hoses tomorrow morning , top and bottom, only thing I havent changed... I feel like its something dumb I missed somewhere.. Please let me know your input... Thank you

You do know the first question I'm going it ask you, don't you? Do you have a fan shroud on it? It's incredible how important that is on an XJ. Without it the air isn't funneled thru the radiator properly.

Have you noticed any problems with water flow when you are flushing it. Sometime when shops "change" freeze plugs, they just knock the old one into the block (not removing it) and put a new one in its place. Seen it before, sadly.

Could be either your thermostat is defective or your temp sensor needs to be looked at. Are you able to verify the engine is actually running at said temp on the dash gauge?

Does it have the original 0331 head? You mentioned the gasket, but there is a widespread issue with 00 and 01 head original heads cracking. Is there any trace of coolant in the oil?
