They'll take a little bit to set in.
That said you could still have them adjusted out too much. I'd say if its not goe after a few drives look in them again.
Were the drums hard to slide over the shoes?

No they weren't hard to slide on. I had to adjust the star wheel thing almost all the way in so the drum could spin more free. Even almost all they way in there was some slight contact between the shoe and drum. I had watched a video on how to adjust them and followed that.
