31x10.5's will work, Most will go for a 15x8" rim but yours will work.

32" should fit with some trimming and bumpstops. I do prefer the look of bigger tires with smaller lifts.

You can fit 35's if you want. I run 33's on my 3" and i love it.

And no, it doesent take too much truimming. Your bumpstopping is more important.

My current XJ ('92 Laredo) had 32's on a 3" lift and stock rims when I got it. The front tires rubbed the LCA a little at full lock but didn't rub the fenders or flares any and the tires sat pretty close to the rear springs. I went back to 31's and they just barely rub the LCA's at full lock. Just waiting for a little cash to get new rims. So yeah, 31's will fit fine on a 3" lift and 32's would be OK. For 33's (or larger), I would get better rims (for the offset and backspacing) and do some trimming.

My buddy ran 32s on his 3" lift with only a little bit of trimming.
And if you only have a little bit of rubbing like I did after my lift, you can do what I did and pull off the flares & endcaps and re-drill the mounting holes to open up the wheel well a bit to clear the wheels.
