I'm probably gonna pass on them and just keep on looking for some used 31's.

There are plenty of shady tire places around the way that will do anything you ask for a few bucks.

Buy 16x8's and run 3.75" backspacing.

285/75R16s are going to look horrible on 10" wide wheels and blow beads while trying to parallel park.

With only 1" difference between tire width and rim width the tire is going to balloon out and look stupid.

IMO.

I have that size tire on my truck with an 8" wide rim from the factory. Any wider and it would just look silly.

Are you set on 10" wide wheels?!

The only way I'd run a 10" wide wheel is with a 13-14" wide tire.

Iirc. Isn't it that you can run up to 4" wider of a tire to a rim

I run 10in wheels with 12.5in tires and I used to have 12in rims on 15.5in tires.

That's the accepted norm. 31x10.5s fit on a 7", x12.5s fit on an 8", and above 12.5 should have a 10". Generally speaking.
