Should be fine with 16" Icons and 31"s with 3" lift.

I run 265/75-16 on a re 3.5" kit, buuuuut that kit actually lifted me 4.5". I only rub at full lock, and thats only because im running the stock icon wheels.

A 265/75-16 would roughly be a 32x11. I would run a 245/75-16 (which is close to a 31x10.5) if i were you, or a 265/70.

265/75 = 31.6x10.4"...and rim size won't matter at only a 1" difference.
245/75= 30.5x9.6"

Like i said, a 33x12.50 will actually measure 32.xx and 12.xx

Manufactuers round up to the next whole number so a 265/75-16 would be the equivilant of a 32" tall tire. A 245/75 would be the equivilant of a 31" tall tire. Rim size has nothing to do with overall height of the tire, a 32" tall tire is 32" tall wether its on a 12" wheel or a 26" wheel.

Anyways, the point i was getting at to the OP was that a 265/75 would be too tall for what he wants/needs for his truck. A 245/75-16 would be the closest p-metric sized tire to a 31x10.50.
