How hard would it be to move the seat back a couple more inches in an '01 cherokee?

Because of where the seat mounts now, the floor pan and unibody are reinforced in those areas. The front seat riser is welded to the floor pan, and the seat belt would need to be relocated also. "IF" you did relocate the seat then were to get hurt in an accident, it could be a real mess with the insurance company. I would leave it where it is at.

u could try to raise the seat up, instead of moving it back, a buddy of mine put spacers under his seat mounts in his yota to raise his seat up and gave him a little more leg room

Yeah man, I was just joking with ya. I feel for ya on the clearance issue. I'm 6 foot 1 240lbs and I could use some room too. I think it would be a PITA to try to relocate the seat. I tried to remove them for room when I removed my dash to do the heater core job. The bolts were ready to snap without trying. I don't know if you can move them back without all kinds of modifications since the floor is molded for the seat to sit in one place.
