Iirc all you need in NY is the rear and driver's side mirrors to be legal.
Some stuff I wish I'd known when I did mine:
1. Go to harbor freight and get a cheap air grinder and air hammer. I think I paid like $20 total for both of mine. The air grinder fits in better and does a much quicker job of cutting the hinges than a Dremel does. Plus the wheels are much cheaper than Dremel wheels.
2. Use a jack to lift the drivers side doors up. As soon as it gets real pressure on them they'll lift right out of the hinges. They're near impossible to take off by yourself the first time after being in place 11-20+ years.
3. Drill the hinges out with a 1/4" bit and grease the pins. Makes taking them on an off a breeze. I can literally take mine on and off as fast as it takes to lift the door now.
4. Trim some length off the top hinge pin. The bottom tends to want to slip in first and it makes putting the front doors back on easier since they're significantly heavier than the rear.
5. Use the air hammer you bought on the pins. It takes them out in about 2 seconds what took me about 30 minutes with a hammer and punch.

depending on what when in 97 yours was built, you may have either the old style hinges or the newer hinges. Make sure you know what;s needed for whichever style hinge you have.
