Quick disconnects on the front sway bar, and remove the rear sway bar all together.

Nope, there's a lot of discussion on sway bars vs no sway bars. It's a personal driving choice really.

I like to have my front sway bar to eliminate body roll up front, but I always ditch the rear sway bar.

You won't notice the lack of rear sway bar. With the front out or disconnected, you'll feel a bit more roll when cornering.

The front will roll when disconnected and be stiffer when connected (assuming quick disconnects) and the rear will be stiff either way since the leafs really handle body roll well.

I'm a big fan of the JKS quick disconnects, and they seem to be the standard for the disconnect world. Essentially a disconnect is a disconnect so you should be fine with any brand.

The rear track bar is very easy to remove. I think it's 3 bolts per side and it just falls away.

a well balanced (front to rear) suspension will give you the best stability and level chassis under articulation.
