I would imagine you would want to add some sort of chassis stiffeners like Ruff Stuff's to keep your unibody somewhat straight. With the doors off all the time the uniody is able to flex more, and can create issues down the road. That's if you do a good bit of flexing all the time.
Doors provide zero structural support

They're not structural, but they do provide rigidity the same way that frame stiffeners would. The doors do help limit unibody twisting, but not enough that having the doors off for months at a time is going to stress the unibody anymore noticeably. If you're wheeling enough to stress the unibody that much you need stiffeners anyway.
