stock axles will be fine if you are light on the skinny pedal.
imo try it with stock axles at worst youll break then you know to get a stronger rear axle like an 8.8 ford

hmmm... thanks for all the good advice, problem is, this is also my DD, and I have a "Jeep Fund" where I save money for emergencies and things I want. I am totally willing to spend the money to get this done I'd just rather not break anything in the process and get stuck somewhere = ).
I primarily use the truck for mudding and beaches. I'm not a huge fan of crawling so I generally don't do it unless there's some more untouched mud on the other side.
I want to get axles that are preferably the same size as my current and I'd like to get them geared so the truck drives closer to stock, my goal now is professionalism and pride in my rig.
Should I get a 60 in the rear and a 44 up front and re-gear them?
I don't want to waste the money re-gearing my current setup just to break it.

I wouldn't run anything less than a 35 on a 60 to be honest, you'll just be losing ground clearance.
And from what I've read on here, the xj's with the 44's were not sold in the states, but some found their way here from central america.

If you're wanting to build a full width axle'd beast with nothing smaller than 35's and you're up to the task of welding on the perches and brackets and such, then hell yeah

An 8.25 out back and a D30 up front with welded tubes and alloy axles will do just fine on 35's.
d44/d60 is total overkill... especially for your intended purpose.
If you were planning on serious rock crawling at going to 37"/38" tire in the future, sure, d44/d60 or my preference would be a d44/FoMoCo9".
