Trim and odd parts are extremely hard to find if you don't know where to look. Pick up a copy Hemmings Motor News.http://www.hemmings.com/

I had a 67 charger with that same motor. Fun car until my ex drove it in front of a 67 Mustang. Totaled them both in one swell foop. I pulled the motor and put in my Dodge Power Wagon. That ended up being a powerful wagon.

650 cfm is the usual size. Anything bigger is over kill. The stock carb had small primaries, with huge secondaries. When they opened up it was like flushing the toilet.

I wouldn't go any bigger than a 600 cfm carb since you have the small valve heads, stock cam and single exhaust.
