1997 jeep grand cherokee laredo 4.0 i6. the oil filter adapter is a) leaking b) the torx head screw is stripped round. What I want to know is if I take an angle grinder and cut 1/4 inch off of the end of it can I then remove it?

If you're careful I'm sure you could get away with doing that. I forget the width of the torx head is for the bit....but if you had a small one, you could also try using an extraction bit if you have one small enough too. Beyond that making a cut is probably your best bet, just take your time.
Even if you ground the head off, your still not going to get the adapter off. I would suggest welding something to the bolt, like a nut. Then you can get a wrench on it and hopefully break it free. Depending on how stripped out the torx is, you may be able to use an extractor like this.
