erradic temperature

erradic temperature
does anyone know what sensor controls the actual temperature gauge on the dash? when i go around a corner and my jeep leans to the passenger side my temp will shoot up and when i straighten out it shoots back down to normal. Since i have a brand new thermostat in, all new coolant, new radiator, and a new waterpump i can only imagine it is an electrical problem. Any one had this problem before?

Engine: 4.0 with all of the noise and clatter
What engine? The sender on the 4.0 is on the driver side of the head towards the rear of the head at about cylinder #5 right next to the injector wire harness cover.
