Best Wheel/Tire setup

What would be the best wheel and tire setup on my completely stock 04 Grand Cherokee? Has 245/70R16s stock wheels on right now. I’m thinking maybe American Racing Wheels or Mickey Thompson Wheels. I want 2 inches of stance! Should I just get spacers?

Not sure what you mean by 2 inches of stance.
If you want your wheels to stick out 2 more inches get wheels with 2 inches less back spacing than your current wheels.
Get whatever wheels you like to look at. Its your Jeep

I'm personally running P225/75R16's and 16" x 7" Wrangler JK alloys on my WJ. The tires I have are the Cooper Discoverer AT/3, but the now-discontinued model before they made the AT/3 a series. Wrangler wheels look really cool on WJ's. Any wheel with a 5" x 5-lug bolt pattern will work.
