...I need to get them out to get the trim off. I've read a lot of different suggestions and it seems like just cutting the trim is going to be the easiest way to deal with this? It's probably not going back in anyway?

You can cut a slice from the bolt hole to the bottom of the trim, then flex the plastic off around the bolt.
