There are plenty of trails just east of San Diego off the 8.
If you like mud then I sugest going up Pine vally road after a good rain. Not that that realy ever happens in so cal.
If you want rocks go to Corral Canyon. There are 5 trails out there currently and working on another. They range from easy to double black diamond. But dont think there all that hard they realy arent I go out there and run them in my xj.
There are also several trails I have never run alittle farther out off the 8.
Carve Acre or Pancake rock as most people call it is a good trail also.
Almost for got there is also truckhevan and ocittio wells (sp).

Heres a cpouple sites to check out if your interested in locating a few of these.

Hope this helps

mark, its a bit of a drive for you but on september 24th and 25th is a big run at jonson valley called fun in the desert, there will be thousands of people there and theres different runs on different trails ranging from fairly hard to "you shouldnt even drag a car thru there" lol. theres a trail out there you can make on 31s and a locker if you know what your doin or just get winched up, it has 4 waterfalls to drive up , ill be in tech inspection so come check it out if you can

if jonson valley is a little much for you then we are doing a run on the 18th on pilot rock, its very mild and is doable in a stock xj if you know how to drive.
