With a cloud coming out you should be able to sniff out if its either coolant or oil burning in the combustion chamber. It's got a leak somewhere. If your motor is high-mileage, the pressure from combustion could be pressurizing the case, pushing oil through the PCV into the intake. When you say it's only at take-off, it makes me think that it's probably oil burning.

Upon further investigation I have determined it is not oil, but antifreeze...can anyone tell me the likely culprit? Which gasket needs changing?

Head gasket or cracked head. Cross your fingers it's just the gasket.
