Its the white sensor looking thing that sits low, right in front of the coolant resevoir.
The reason I'm asking is my overflow dumped blazing hot coolant all over this thing for a good while, and my Jeep has been running like crap, stalling and all.
So what is this? And could the fact that it was soaked with coolant be causing me problems

That looks like connector C108.
The starter solenoid wire, both alternator control wires, and the AC Clutch wire goes through that connector.
How is your alternator acting (voltmeter on dash)? If the voltage drops to 9 volts or less the PCM will go nuts.
If your alternator and battery are okay I would rule out this connector as a problem. It should be cleaned out with electronic cleaner any way.
Are you sure your Power Distribution Center (PDC) didn't get soaked.

What exactly is the power distribution center and how would I determine if it got wet?

The PDC is that black plastic box next to the radiator overflow reservoir, containing fuses and relays.
Remove the lid and look inside.
