Walking the dog
Had some shims installed this evening in attempts at removing driveline vibes, now the Jeep is dog walking down the road. (dog walking = jeep is not driving straight). Does this make sense to anyone? How could I fix this?

you didn't get the shims on the pegs, or the axle on the pegs for the shims. without the peg (I'm betting you don't have pegs contacting the spring perch at all now, much less centered), the axle will never actually be in the proper locatioin...and it can be dangerous.

OK now that makes me a bit nervous especially after driving it into work this morning. Since the shop did the work how do I double check that they did everything correctly? I don't want to endanger my family over poor workmanship. Is there a method of checking for pin insertion depth without taking everything apart? If so how much insertion should there be? If possible I will measure with calipers this evening.

I think the key words here are "Had some shims installed...."
I am assuming you were provided new centering pins with the Shims ?
Apparently who ever installed your shims didn't use new Centering Pins provided but simply lifted your packs and lowered the springs existing centering pins base onto the shims instead of unbolting the spring packs and reassembling the spring With the new Centering Pin provided with the shim and refastening it all together again.
The spring pack apparently isn't anchored into the axle's spring perch now but instead is resting in the shim and sliding about on the spring perch whenever subjected to torque.
Hence as to why you have FREE 4WD steering now.
Looking from the back You should be able to visually check the alignment of the Shim vs Spring Pack above it as well as that of the the sides Spring Perch.
Also, make sure they retorqued your Axle UBolts while you are down there. Maybe they didn't cinch them down fully as well.
