I would say the better idea would be to spend the money on engine mods too. I think you could improve your gas more by exhaust, injectors,TB, etc than a tire swap.

a 215/75/r15 is 27.7" high x 8.46" wide.

find a 225/75/r15 street tread and go with it.

Larger tire = more mass = engine has to work harder to turn it = decrease in fuel economy.
