Well, lets just say this should be the last time you bring your Jeep to this fellow. Don't think you'll see your money back, maybe try a supervisor, if he's working in a bigger shop (at least you've tried in that case), but otherwise take your loss and get into this yourself and we'll see how we will get this solved.

He doesn't sound very professional to me if he's telling you that a vehicle runs worse after a tune up. Sounds more like he's giving you the run around. I bet that if you call him once you hit 100 mile you won't be able to get a hold of him, He will stop answering all of your calls or his number will be disconnected.

it does take time for the ECU to adapt to new sensors but it shouldnt be that bad. something isnt proper in the situation, and to reiterate someone elses statement, if he has a boss call them and complain and either get a chilton's or take it to a reputable mechanic.

It has no function in engine management and the ECU does NOT have to get used to this new sensor.
The only time the ECU actually has to 'learn', is after reset, or when you have had your battery unplugged for a certain time. And even in this case, the ECU runs of preset programms, finding the most suitable till it has seen x times starting cycles (20 or 50 or something, it doenst matter for now).
Your engine was running fine before the tune-up and now it doesn't. Make work of it, check the leads, see if all things have been connected correctly, check your plugs (which ones have been installed, and have they been properly gapped?) etc etc and visit that mechanic once more.
But DO NOT buy crap...

You can drive around with your oil sender unplugged.

so you used a street mechanic?
Never a good idea... always do stuff like this yourself...
I just did the exact same tune up you did... even the oil pressure sending unit... +more... guess what?
she purred like a kitten! what is happening to you is NOT normal.

spark plug gap is .035 what brand did you use? guys around here seem to have good results from the stock champion copper plugs..
checking wire leads is pulling each wire off... checking inside them to make sure they are not damaged.. and re seating them and making sure that they snap onto the cap and plug.. might throw a little dielectric grease in there while you have them off if they don't already have it
I would also pull the distributor cap and rotor and make sure there is no damage..
Did he purchase the parts or did you? what brands did you go with?
This could be a fault with his workmanship, or with the part/s themselves
