Ok, so I've had some grinding noise coming from my front end, so I jacked up my passenger side where I heard it coming from. I think it might just be my brakes grinding, or bad hub.... but I'll deal with that later.
While I was under there I turned my passenger wheel 1 full rotation, the axle turned 1.75 rotations. I have no clue what to make of that. Any help would be great in figuring out what my gear ratio is, so I know what to swap to when I go with larger tires. I thought I had 4.10's but I now have no clue.

IIRC, you have to mark a wheel stud, turn the pinion shaft, and count the revolutions on the pinion until the marked wheel stud returns to original spot where you started.
Someone correct me if im wrong, this is just something ive heard

you almost certainly have 3.55:1 ratio gears with a manual tranny and the I4 engine. Best way to tell it to email jeep your VIN and ask for the build sheet.
Your findings seem to confirm this.
It agrees with the formula: # driveshaft rotations / (1/2 x # wheel rotations)
1.75 / (1.0/2) = 3.50

I was hoping someone had a method to figure out by axle rather than pinion.
