You can get a mechanical gauge and check the pressure. The sending unit on my 98 XJ isn't accurate it stays at 80 all the time.

I have never used one before, but you unscrew your sending unit and the gauge screws into where the sending unit is. The mechanical gauge will give you an accurate reading of the oil pressure since the sending units on Cherokees are known to not be accurate.

The mechanical gauge looks like this and you can buy one at an auto parts store.

LOL! Read the op's post a little closer. He said the sensor on the rear of the head. That is for the temp. The oil pressure sending unit is above the oil filter.
As for the original question. You can verify the the temp with a IR temp gun aimed at the t-stat housing. I am not really sure if there is a good way to check the sensor it's self.

After swapping my instrument cluster (my stock one came with idiot lights only, the new one has real gauges), and replacing the two sensors, my Temp Gauge reads kinda high or so it seems. I'm going to have to test mine, but I suspect that it just reads high.
